Puff Pastry Samosa Chaat came to me because of my love for Indian Chaat. Our eyes light up when we just hear samosas, well for me my heart skips a beat. Samosa by far has been my favorite of them all and then comes veg. puffs. I love the texture of puff pastry, light and flaky. So for me the love of samosas and puff pastry is real. Like very very real. I was craving for some chaat the other day, there was puff pastry sitting in my freezer, chutneys in refrigerator and tons of potatoes in my pantry. You guys know what I did.
Puff Pastry Samosa Chaat
Samosa Puff Pastry Chaat is great for game night, for dinner parties, for very light indulgent dinners or maybe when you just want to eat Chaat. This recipe is packed with flavor, needs no samosa masala, and extremely quick and easy to assemble. I am telling you this recipe is a keeper.
How to Make Puff Pastry Samosa Chaat Step - By - Step
As I said earlier it is very easy to make this Samosa Chaat. It doesn't matter it you make the chutneys at home or buy store bought ones. The puff pastry is very easily available in the market and even the vegan and the gluten-free ones. I bought my whole wheat puff pastry from Trader Joes. I like to make cooking fun and easy so I don't prefer to bring a storm in your kitchen. I want it to be fun, easy and super delicious. So lets start with the recipe.
De Thaw your Puff Pastry 2 hours before or as instructed on the box of your Puff Pastry
Make the Samosa Masala Next
- Boil the Potatoes
- Once the Potatoes are boiled, peel of the skin, and mash them using a potato masher.
- Soak green peas for about 10-12 mins in hot water.
- Add the peas to the mashed potatoes.
- Now take a heavy bottom pan, turn on the stove on medium high flame.
- Add oil, fennel seeds, lightly crushed coriander seeds and cumin seeds. Let it sizzle.
- Next goes in garlic, ginger and green chili paste/ minced. Cook it thoroughly until the raw aroma goes away.
- Add the mashed potatoes and peas in next. Give it a light mix.
- Next goes, red chili powder , coriander- cumin powder, Amchur Powder (Dry Mango Powder) , turmeric , garam masala and salt.
- Give everything a thorough mix until the spices are cooked and mixed with the potatoes. Give it a taste. and turn off the flame.
Roll out the Puff Pastry
- Preheat the oven at 400F or as instructed on your puff pastry box.
- The Puff pastry will be de thawed after two hours.
- Now line your kitchen counter with a parchment paper. Refer to the pictures for detailed explanation.
- Next sprinkle flour on top of the parchment paper.
- Place the puff pastry sheet on the parchment paper.
- Gently open it, remove and discard the parchment paper that comes with the puff pastry.
- Sprinkle some more flour on the puff pastry.
- With a bakers thick wooden rolling pin, start rolling the puff pastry in a rectangle until 1 inch thick.
- Make 6 equal parts of the pastry as show in the picture.
- Pierce the puff pastry sheet as shown.
- Make flour and water mix. Moisten your fingers and seal all four sides turning inside, refer the photo.
- Using a fork again press it on all your sides as shown in the picture.
- Fill it with Samosa Masala.
- Bake it for 12-15 mins until it has a nice golden crust.
Final Assembling
- Once the Samosa Puff Pastries are out of the oven, top them with tamarind and dates chutney, cilantro chutney and garlic chutney.
- Next top with with some freshly chopped onions, tomatoes and cilantro.
- Last add thin sev on top.
- All done! enjoy!

- 2 Boxes Frozen Store Bought Puff pastry Each box comes with 2 pastry sheets
For Samosa Masala
- 5 Large Boiled Potatoes
- ¾ Cup Green Peas (Fresh / Frozen)
- 3 teaspoon Oil
- ½ teaspoon Cumin seeds
- ½ teaspoon Fennel Seeds
- ¼ Tsp Crushed Coriander Seeds
- ½ Tsp Red Chili Powder
- ½ Tsp Coriander- cumin Powder
- ½ Tsp Amchur Powder ( Dry Mango Powder)
- ½ Tsp Garam Masala
- ¼ Tsp Turmeric Salt
- Salt to Taste
Roll Out Puff Pastry
- ½ Cup Plain Flour For sprinkling
- 1 tablespoon Flour To Make flour water paste
- 3 Tbsp Water To Make flour water paste
Final Assembly
- ½ Cup Cilantro Chutney
- ½ Cup Dates and Tamarind Chutney
- 1 Medium Onion Finely Chopped
- 2 Tomatoes Finely Choppes
- ½ Cup Chopped Cilantro
- ½ Cup Thin Sev
Instructions
De thaw the puff pastry sheets 2 hours before.
